With over 30 years' experience Les started his career in mostly 1-3 Michelin stared kitchens, to then achieving his own first star in 2002 at Ynyshir hall, in West Wales. Having also worked in 5 star Relais and Chateaux properties to more recently working with private, independent hotel and restaurant operators to develop his commercial prowess. Les can bring a wealth of knowledge and proven track record to maximise kitchen operational activity, improved food and menu standards whilst growing profit margins. With a strong understanding of cost of sales and strong relationships with our procurement partners, backed with a complete understanding of food safety and compliance, he can provide solutions to all back of house activities within your business. Les achieves his results through an ability to work with owners/investors and all grades of Chef and back of house staff.
